Bring the edge of the plastic wrap up to cover the fish, place a small cutting board or second sheet on top and weigh it down with a can or two; refrigerate all day or overnight. After about 12 hours, unwrap the fish and flip it over, rerubbing the (now wet) cure over the surface; rewrap and return to the fridge for another 12 hours.
